I’m excited about this week’s menu!
Sunday: Leftover black bean soup and sweet potato fries (baked, not fried).
Monday: Chicken tortilla soup, to which I add beans and rice.
Tuesday: Kerrygold Dubliner cheese (freebie still available!) with crackers, olive oil, and pepper. Served with La Madeleine’s tomato basil soup …The recipe leaked out a few years ago. Supposedly something is missing from it, but it tastes pretty right on to me!
Wednesday: Spaghetti with meatballs and tomato sauce. The recipe link is to BBQ meatballs, which I’ve heard is great, but this time, I’m just making the meatballs from it. No BBQ sauce.
Thursday: “Brenner” aka Breakfast dinner… breakfast burritos with eggs and bacon! Fruit too.
Friday: Penne with Zucchini. Instead of bow-tie pasta, as in the recipe, I’m using penne… doesn’t really matter what type! Same taste. See image below… yum, right?!
Saturday: Young Couples event at church, for which I’m bringing dessert! OR If my mom’s in town, we’ll skip that and go out to eat!
