Well as you saw by all of my corrections last week, I am still working on figuring out exactly how much/often I need to cook, how much will be leftover, and how much we’ll use during the week for lunches. We’ll see how I do this week!
Sunday: “Brenner” aka breakfast for dinner – scrambled egg and bacon sandwiches, berries.
Monday: King Ranch Chicken Casserole (You’ll notice I did not make this last week.)
Tuesday: Leftovers or egg sandwich for me. Hubby working late.
Wednesday: Pasta with meatballs and tomato sauce. (Two notes: 1. The recipe link is to BBQ meatballs, so I’m just making the meatballs from it. No BBQ sauce. 2. I’m hoping hubby will have a few meatballs leftover for lunch.)
Thursday: Black bean soup. (I’m hoping my hubby will want to take this for lunch as well.)
Friday: Hubby cooks! Pork tenderloin, mashed potatoes, salad or a veggie.
BLTs, sweet potato fries (baked, not fried). This will now be our lunch! Lunch was leftovers. Just so many! For dinner, we are having several families over and grilling fajitas!
