I hope y’all had a “hoppy Easter!” We sure enjoyed wonderful time with family!
I have been working on our menu for the month of April! Do you love monthly menu planning as much as I do? It’s good stuff! Just now, before typing this, I sat down with a more updated schedule and rearranged a few meals. With my monthly menu, I can do that. Easy peasy.
Here’s what we are having this week…
Breakfasts:
- Oats and eggs!
Lunches:
- Leftovers - boring, I know. Last week, I forgot to mention on here, but we had a lot of turkey and swiss roll-ups and sandwiches!
Dinners:
- Leftovers x2
- Eating out with family
- Sweet potato chili
- BBQ chicken sandwiches, homemade mac and cheese
Salmon, saladAlready changing this to pesto chicken, salad, and a side. I keep running out of time to fix this, so this week it is!
- Smoothies! We have lots of berries I recently froze, and a lot of homemade yogurt!

AND… ahem… dinner out with friends on Friday!
