My sweet cousin-in-law, Laura, happens to be an amazing baker! She can bake just about anything, and as I said, it’s always UH-MAZING! While we were in Galveston recently for a family reunion, some of our bananas became too ripe to eat, so she whipped up banana bread cookies! Check it out.
Banana Bread Cookies:
- 1 c. butter
- 1 c. sugar
- 2 eggs
- 1 t. vanilla
- 1 banana, mashed
- 2 c. flour
- 1 t. baking soda
- 1/2 t. salt
- Preheat the oven to 350.
- Cream together butter and sugar.
- Beat in eggs, vanilla, and banana.
- Combine flour, baking soda, and salt; blend into butter mixture.
- Place them in balls on a cookie sheet.
- Bake 10-15 minutes.
- Let cool and top with frosting, below.
Cream Cheese Frosting
- 8 oz. cream cheese
- 4 oz. butter
- 2-3 t. milk
- 1 lb powdered sugar
- 1 t. vanilla
- Beat all ingredients together until smooth. Easy!
If you’ve stuck with me long enough, you may have noticed a banana theme… I really love bananas!
What I love about these cookies is that they aren’t super rich. They are sweet and tasty without being overwhelmingly sweet.
