Menu Planning for the Week of 9/17/12

Hiya friends! I’m excited to try a couple fall-ish breakfast recipes this week! Join me?

Lunches:

Clearly you can see we are still lacking on good lunch ideas. I’m not really sure how I feel about grains, since there’s a lot of information out there on grains being bad for us… I’m undecided. So I’ve been limiting our bread intake. But I could really use some inspiration for something light and easy that a toddler might enjoy as well as an adult. Anything??

Dinners:

  • Leftovers x2
  • Stuffed green bell peppers – Can you tell that this is a favorite around here? LOVE it. So healthy too!
  • Sloppy joes, salad or veggies
  • Date night in – take out!
  • Dinner at birthday party – or eat out

  1. One of my favorite easy things to make for the girls lunch is black bean quesadillas. They are so simple. A little oil in a pan, flour tortilla with cheddar cheese, black bean, cumin, and chili powder. You could get fancy and add some bell pepper, onion, or whatever else. I cut them into pizza shape slices, and my girls love them (I do too!). Easy, cheap, and healthy (mostly).

  2. I should say, I put one flour tortilla on each side, and flip them over so both sides are lightly browned.

      if you have a george forman grill, I put the tortilla on the forman grill… after it heats up the tortilla i add the ingrediants i want in mine and fold it over with cheese inside to keep it together and grill for a few more mins till all is hot or heated… love my george forman grill…
