I’ve missed you guys! But it’s also been soo freeing to have some time away! One of the most popularly viewed posts on here is the weekly menu, so I’m guessing there are some of you that have been missing it! Here’s what we’ve been eating lately…
Breakfasts:
- Fried eggs, fruit
- Smoothies loaded with greens and fruits
- Scrambled eggs, cuties, cinnamon sugar toast
- Banana bread oats
- Steel cuts oats… Lil loves adding peanut butter to them!
Lunches:
- Grilled cheese, veggie chips, carrots or baby tomatoes
- Quesadillas
- Revolutionary mac n cheese
- Leftovers
Dinners:
- Pappasito’s take out, using holiday gift cards
- Chicken enchiladas
- Quinoa and black beans with chicken
- Roasted chicken and potatoes, spinach salad with feta
- Going out
- Soo many leftovers!
Snacks:
- Humus with carrots and bell peppers
- Pop corn
- Pumpkin chocolate chip cookies
- Apple sauce
- Apple slices
- Baked sweet potato fries

We love pesto crock pot chicken.
Chicken thights
jar of pesto
sprinkle ranch packet over top and stir
cook on low 8 hrs
Serve w either mashed potatoes, rice or noodles and a veg or salad
