Ham and Cheese Quiche

Quiche has become a great way to use less meat and to make the most of our eggs! It’s a yummy dinner – both plain and loaded with veggies!


  • 3-4 eggs, depending on how many veggies and extras you use. If you do a plain quiche, I would use 5 or 6.
  • 1 c. cheddar cheese, shredded
  • 1 c. chopped ham (optional)
  • 1 c. whole milk
  • 1/2 t. salt
  • 2 T flour (I use whole wheat.)
  • 1 pie crust (I prefer homemade… I use the recipe on the back of my bag of organic pastry flour.)
  • Optional: chopped onions, peppers, mushrooms, spinach, whatever floats your boat!


  1. Preheat oven to 350F.
  2. Grease pie dish and lay pie crust in it.
  3. Mix together eggs, cheese, ham, milk, salt, flour, and any extras.
  4. Place ham, cheese, and any extras in the dish, on top of the crust.
  5. Pour the egg mixture over this.
  6. Bake at 350F for 45-55 minutes, until slightly golden brown.

  1. Quiche is our go-to for the day our homeschool group meets. We prep it before and then I throw it in the oven before I do anything else (takes an hour to cook). Then by the time we are dressed and the car is loaded, we can eat a good healthy filling breakfast before heading out for a looooooooong day (8am- almost 5pm)! I have big kids and you just can’t cover high school subjects with a growling tummy! I also have a toddler and it’s hard enough for her to just cope with the schedule! Quiche is also an easy recipe for the boys to make and have in their pocket for when they have to feed themselves. Husband training ya know! 😉
